  1. Selection and inspection of potatoes

First of all, the factory will receive large quantities of potatoes from suppliers. In order to ensure the quality of the final product, the factory will carry out strict quality inspection on the potatoes, including checking the size, shape, color and whether there are any pests, diseases or rotting phenomena. Only qualified potatoes can enter the production line to ensure that the potato chips produced have a uniform flavor and good texture.

  1. Cleaning and peeling

After the potatoes have passed inspection, they first need to be thoroughly cleaned. A washing machine is usually used to remove dirt, sand and other impurities from the surface.

This is followed by the peeling process, which is usually done by mechanical equipment. There are two methods of peeling commonly used in factories: steam peeling and mechanical peeling. Steam peeling uses high-pressure steam to quickly soften the skin of the potato, which is then removed by rotating drums or brushes; mechanical peeling uses blades or grinding wheels to scrape the skin directly.

  1. Slicing

The cleaned and peeled potatoes are sent to the slicer, which cuts them into uniformly thin slices as needed. The thickness of the slices can be adjusted according to the needs of the different products, usually between 1 and 2 millimeters. The uniform thickness ensures that the potato slices are evenly heated during the subsequent frying process, thus guaranteeing their texture.

  1. Rinsing

The cut potato slices are blanched (usually briefly in hot water). The purpose of this step is to remove excess starch from the potatoes and to smooth the surface of the potato slices, thus preventing them from sticking together when fried. Rinsing also preserves the color of the potato slices and prevents discoloration due to oxidation.

  1. Drying

Before frying, potato chips need to be dried properly to remove the moisture from the surface. The drying process can be done by hot air drying equipment. This step prevents excessive oil absorption during frying, maintains the crispiness of the potato chips and reduces the waste of oil during the production process.

  1. Frying

After drying, the potato slices are put into a continuous fryer for deep-frying. The frying temperature is usually maintained between 170-190°C and the frying time is adjusted according to the thickness of the potato slices and the desired taste, usually within a few minutes. The frying process makes the potato slices golden and crispy and gives them a unique flavor and texture.

  1. Seasoning

After frying, the potato chips are processed through a seasoning machine. The seasoning powder usually consists of salt, pepper, onion powder, cheese powder, etc. The seasoning powder is evenly distributed on the potato chips through a rotary seasoning device. Some special flavors of potato chips may also be added with more complex seasonings, such as barbecue, tomato, creamy onion, and other different flavors.

  1. Cooling

Seasoned potato chips need to be cooled to ensure consistent quality and taste when packaged. The cooling process is usually carried out by means of a chilled air system. After cooling, the potato chips become drier and the oils are stabilized in the flake structure, preventing softening or rancidity after packaging.

Before packaging, the potato chips undergo a final quality check. This step is usually accomplished through a combination of manual screening and machine inspection, with the goal of eliminating any abnormal potato chips, such as broken or unevenly seasoned chips. The packaging process is also protected by inflation.
