  1. Selecting peppers

The first step in producing chilli sauce is to select high-quality peppers.

Manual selection: Workers visually inspect the color, shape, and freshness of chilli and remove those that are rotten, spoiled, or of substandard size.

Machine selection: Use an optoelectronic sorting machine to quickly sort peppers by color and shape, while removing foreign matter and impurities.

After selecting, the chilli need to be washed thoroughly to remove dirt and surface dust.

 

  1. Crushing

After washing, the chilli are sent to the crusher for preliminary processing. The peppers are cut into small pieces in the crusher. The degree of crushing can be adjusted according to demand.

 

  1. Grinding the chili sauce

The crushed chili peppers enter the grinding machine and are further processed into fine chili sauce. The fineness should be adjusted according to the needs of different products. Ensure that the original flavor of the chili peppers is not lost.

 

  1. Mixing

The ground chilli sauce enters the mixing stage, which determines the flavor of the chilli sauce. Common seasonings include garlic, ginger, salt, sugar, etc., which are added according to the formula ratio. Vinegar or vegetable oil can also be added to enhance the taste and preservation performance.

 

  1. Cooking

The prepared chilli sauce needs to be cooked at high temperature to sterilize and set. Heat the chilli sauce to the specified temperature (usually between 85℃ and 100℃). Stir continuously to prevent sticking or caking. Depending on the product requirements, the cooking time is generally 30 minutes to 1 hour.

 

  1. Cooling

The cooked chilli sauce needs to be quickly cooled to room temperature. After cooling, the temperature of the chilli sauce must meet the filling safety standard.

 

  1. Filling

After cooling, the chilli sauce enters the filling stage. The chilli sauce is filled into bottles or bags. At the same time, it is sealed to prevent air from entering.
